Pedro Ximinez Casks
Pedro Ximénez is a very sweet, dark dessert
sherry. It borrows its name from the variety of white
grapes used to make this particular sherry. These grapes are dried
to concentrate their sweetness under the relentless Spanish sun.
The result? A thick, black liquid with a strong taste of
raisins and molasses that is fortified and aged in
solera.
Today, it's still used in sweeter blends of sherry in Jerez,
Málaga and other regions of Andalusia.

UNIQUE FLAVOURS
To the eye
All that concentrated flavour helps concentrate the colours as
well - these casks are dark, with an unmistakable hue of dark
sherry.

perfectly balancing the citrus notes and freshness of our Single
Malt Whisky.
